300ml whipping cream
240ml unsweetened almond milk
67g Erythritol (no-calorie sweetener)
2 tbsp (tbsp) rose water
1 tsp (teaspoon) cardamom powder
1 tsp (tsp) vanilla essence


- Soak saffron in a bowl, add 2 tablespoons of warm water, soak for about 10 minutes to remove the essence.
- Mix gelatin powder with water, let stand for 5 minutes.
- Pour whipping cream, almond milk and keto-Erythritol sweetener into the pan. Cook over low heat and stir until the sweetener dissolves.
- Remove the pot from the heat, add vanilla essence, rose water, saffron water , cardamom and gelatin water, stir well to have a mixed mixture. If rose water is not available, it can be replaced with regular filtered water.
- Pour the milk cream mixture into the prepared jars / cups and leave in the refrigerator for at least 2 hours for the Panna Cotta to solidify.
