How to prepare saffron stewed quinoa

2-3 pinch of saffron (10 - 20 strands)
90g quinoa seeds
¼ tsp cardamom powder
1-2 tbsp honey or maple syrup (optional)
½ tsp coconut oil
100ml coconut milk
100ml filtered water
Step 1: Prepare the ingredients

Soak saffron in 2 tablespoons of warm water.
Carrots are peeled, washed and grated.
Step 2: Stew quinoa with saffron
Put the coconut oil in the pan, simmer until the oil is hot. Add carrots and cardamom powder and sauté for 3-4 minutes until fragrant.
Put the quinoa seeds, coconut milk, filtered water, the water soaked with saffron in the pan, stir gently.
Bring the above mixture to a boil, then reduce to medium heat, cook until the water in the pan is 20% less than the original.
