
Saffron Greek yogurt - saffron (Shrikhand) - Strange but delicious
Shrikhand, also known as Greek yogurt, combines with a hint of saffron and the crunch of nuts. Fresh desserts only need 5 minutes to start making, try it!

Ingredient
- 3/2 cup Greek yogurt
- ½ cup powdered sugar (Confectioner's or granulated sugar)
- Shredded Saffron Yarn
- 2 teaspoons warm milk
- ¼ teaspoon cardamom seed powder
- 6 chopped almonds
- 6 chopped cashews
- 6 chopped pistachios
Instructions on how to make saffron Greek yogurt
- Crush the saffron with your fingers and add the warm milk to the bowl containing the crushed saffron. Stir and set it aside.
- Add Greek yogurt, powdered sugar, and saffron milk to a bowl. Now stir and mix. Do not stir or beat too hard or the dough will be watery.
- Now add the cardamom powder and nuts to the bowl.
- Stir again, then cover and chill in the refrigerator until use.
- Shrikhand tastes best when chilled.
Note
How to make curd? (for the traditional method)
- Prepare a bowl strainer to make curd. Take a large, deep bowl and place the sieve on top. Choose a bowl deep enough that the bottom of the strainer does not touch the liquid collected in the bowl.
- Place the cloth (or handkerchief) over the strainer and add 4 cups of yogurt. Gather the edges of the fabric, twist and tie. Keep in the fridge for at least 5 hours (you can keep overnight).
- You should now get condensed yogurt (aka curd) and all the whey liquid collected in the bottom bowl. You should get about 1 ½ cup of curd.
- Use this condensed yogurt instead of Greek yogurt in the instructions mentioned above if you want to know how to make saffron yogurt.
Powdered sugar:
- I used store-bought powdered sugar (aka confectioner's or granulated sugar). You can use regular granulated sugar. If so, grind it into a powder form so that it can easily be mixed with yogurt without making the mixture thicken.
- If you choose the traditional method, use fresh, regular yogurt (less sour). Do not use yogurt that is too sour, it will ruin the taste.
