How to make unique saffron rice, Persian taste

- 2 tablespoons extra virgin olive oil
- 3/4 cup minced purple onion
- 2 cups basmati rice
- 3 cups chicken or vegetable broth
- 3/4 teaspoon salt (if using a low sodium, adjust salt to 1 teaspoon)
- Servings: 1/2 cup. The recipe cooks about 6 cups of rice.

- It is important to use good quality saffron for this recipe. There are several types of "fake safrron" on the market that are not expensive, but do not have a taste. Saffron is really expensive, but you only need a little to add a lot of flavor.
Instructions on how to make unique saffron rice
Take half of 1/4 teaspoon of saffron and put them in a mortar. Grind the spices with a pestle until the mixture becomes a powder.
Add a second pinch of saffron to the mortar. Continue, pound the saffron threads in a mortar and pestle.
Pour 1/4 cup hot water into the bowl. Let the saffron soak for 5 minutes. This enhances the flavor of saffron.
Add warm water to the saffron container.
Wash the rice thoroughly and drain the water.
In a large pot, heat extra virgin olive oil to medium. Add the minced onion to the pot and sauté for about 10 minutes, stirring constantly, until the onion is soft and begins to change color.
Diced onion into the pan.
Add the washed rice to the pot and stir-fry for another minute, mixing the rice with the sautéed onions.
Pour the saffron yellow liquid evenly over the top of the rice.
Add saffron juice and start cooking.
Add chicken broth or vegetable broth and salt to the pot. Bring to a boil, stir.
Boil rice in the pan.
Cover the pot and reduce the heat to low. Let the rice sit for 20 minutes. Turn off the heat but keep the lid on and continue to let the rice and steam in the covered pot for another 10 minutes.
Spoon the rice with a fork before serving, stirring to break up the rice and combine with the cooked onion.
Finish and put the saffron rice in a bowl to serve with the prepared food.
